摘要
目的通过对壳聚糖进行接枝改性,利用席夫碱反应制备壳聚糖接枝ε-聚赖氨酸(CSPL)共聚物,探究其在香蕉保鲜中的应用效果。方法利用紫外可见光谱、傅里叶变换红外光谱、核磁氢谱和抗菌性分析等技术对CSPL的结构进行表征,并通过涂膜处理香蕉,分析其在贮藏期间的色度、硬度、腐烂率、质量损失率、可溶性固形物含量和维生素C含量等指标的变化,同时与去离子水(CK)、咪鲜胺和壳聚糖等组进行比较。结果CSPL涂膜处理能有效延缓香蕉表皮颜色变暗,降低果肉硬度下降速度,减少腐烂率,减缓质量损失率上升,保持可溶性固形物维生素C含量。其中,质量分数为0.25%的CSPL涂膜液处理效果显著优于其他组,在22 d时腐烂率比CK组降低了16.67%,Vc保持在(33.88±0.44)mg/100 g,转黄后能将色度保持在90°左右,外观品质更好。结论壳聚糖接枝ε-聚赖氨酸涂膜能够有效提升香蕉的保鲜品质,延长其货架期,具有广阔的应用发展前景。
The work aims to prepare chitosan grafted ε-polylysine(CSPL)copolymer by grafting modification of chitosan using the Schiff base reaction to investigate its application in banana preservation.In the experiment,the structure of CSPL was characterized using ultraviolet-visible spectroscopy,Fourier transform infrared spectroscopy,nuclear magnetic hydrogen spectroscopy and antimicrobial analysis,and bananas were treated with film coating to analyse the changes in indexes such as colour,hardness,decay rate,weight loss rate,soluble solids content and vitamin C content during the storage period,and also compared with the groups of deionised water(CK),miconazole and chitosan.The results showed that the CSPL coating treatment could effectively delay the darkening of banana skin colour,reduce the rate of decline in flesh firmness,decrease the decay rate,slow down the increase in weight loss rate,and maintain the soluble solids and vitamin C contents.Among them,the treatment effect of CSPL coating solution with a mass fraction of 0.25% was significantly better than that of other groups,reducing the decay rate by 16.67% at 22 days compared with the CK group,keeping the Vc at(33.88±0.44)mg/100 g,and maintaining the colour at around 90° after turning yellow,with better appearance quality.This study confirms that chitosan grafted ε-polylysine coating can effectively improve the freshness quality of bananas and prolong their shelf-life,which has a broad application development prospect.
