苹果中有机酸的合成代谢与影响因素研究进展

摘要 有机酸是影响苹果口感的关键指标,苹果中的有机酸不仅赋予苹果独特风味,而且具有多种生理功能与药用价值。苹果成熟过程中品种、环境、农艺条件等因素影响有机酸的合成与代谢转化,研究苹果中有机酸的调控变化与影响因素对提高苹果品质至关重要。该研究对苹果中有机酸的合成代谢及对苹果品质的影响进行了阐述,并对成熟过程中有机酸变化以及影响因素进行了探讨,以期为苹果种植过程中有机酸调控与提高果品品质提供参考依据。 Organic acids are a key indicator that affects the taste of apples.Organic acids in apples not only give them a unique flavor,but also have various physiological functions and medicinal values.During the ripening process of apples,factors such as variety,environment,and agronomic conditions affect the synthesis and metabolic transformation of organic acids.Studying the regulatory changes and influencing factors of organic acids during apple ripening is crucial for improving apple quality.The synthesis and metabolism of organic acids in apples and their impact on apple quality was studied,the changes in organic acids during the ripening process and the influencing factors were explored,in order to provide reference for regulating organic acids and improving fruit quality during apple planting.
