气调处理对刺嫩芽贮藏品质的影响 被引量:1

Effects of Controlled Atmosphere Treatments on Storage Quality of Aralia elata

摘要 以‘长白’品种刺嫩芽为试材,采用不同气体浓度(3%O_(2)+5%CO_(2);3%O_(2)+10%CO_(2);3%O_(2)+15%CO_(2);3%O_(2)+20%CO_(2);空气)对刺嫩芽进行气调处理,于0℃贮藏,每隔5 d测定刺嫩芽感官品质、营养品质和相关酶活性等指标,研究了不同气调处理对刺嫩芽贮藏品质的影响,以期为贮藏保鲜提供参考依据。结果表明:对照组贮藏10 d时出现腐烂,异味严重,失去商品价值。与对照相比,各气调处理均能显著保持‘长白’刺嫩芽采后感官品质,抑制呼吸速率、腐烂指数和粗纤维含量的升高,有效保持叶绿素含量,抑制丙二醛(MDA)积累,提高抗氧化能力,贮藏期较对照延长10 d。其中,以3%O_(2)+15%CO_(2)处理的保鲜效果最佳,贮藏25 d时,感官品质评分为80.20,腐烂指数为0.03,蛋白质含量为3.63 g·(100g)^(-1),MDA含量为4.13μmol·g^(-1),对品质的保持显著优于其他气调处理和对照,而20%CO_(2)浓度处理的刺嫩芽感官品质和营养品质下降,表明高浓度CO_(2)会对刺嫩芽造成伤害。3%O_(2)+15%CO_(2)气调处理可以显著提升刺嫩芽的感官品质和营养品质,抑制腐烂和失重,提升贮藏品质。 Taking the‘Changbai’Aralia elata as experimental materials,the Aralia elata were treated with different gas concentrations(3%O_(2)+5%CO_(2);3%O_(2)+10%CO_(2);3%O_(2)+15%CO_(2);3%O_(2)+20%CO_(2);air),and then stored at 0℃,the sensory quality,nutritional quality,and related enzyme activity of salix babylonica leaves were measured every 5 days,the effects of modified atmosphere treatment on the storage quality of Aralia elata were studied,in order to provide reference for their storage and preservation.The results showed that the control group exhibited decay,severe odor,and lost commercial value after 10 days of storage.Compared with the control,all modified atmosphere treatments could significantly maintain the sensory quality of the postharvest buds of‘Changbai’Aralia elata,inhibit the increase of respiration rate,decay index,and crude fiber content,effectively maintain chlorophyll content,inhibit MDA accumulation,and improve antioxidant capacity,the storage period was 10 days longer than that of control.Among them,the best preservation effect was achieved by treating with 3%O_(2)+15%CO_(2).After 25 days of storage,the sensory quality score was 80.20,the decay index was 0.03,the protein content was 3.63 g·(100g)^(-1),and the MDA content was 4.13μmol·g^(-1).The preservation of quality was significantly better than other air conditioning treatments and controls.However,the sensory and nutritional quality of tender shoots decreased in the 20%CO_(2) concentration treatment,indicating that high concentrations of CO_(2) could cause damage to tender shoots.In conclusion,3%O_(2)+15%CO_(2) modified atmosphere treatment could significantly improve the sensory and nutritional quality of aralia elata,inhibit decay and weight loss,and improve storage quality.
