摘要
为明确不同成熟度对灰树花采后贮藏品质的影响,采用PET包装盒对不同成熟度灰树花进行包装处理,测定贮藏期间灰树花的失重率、呼吸速率、褐变指数和质构品质。结果表明,在4℃条件下,不同成熟度对灰树花采后贮藏失重率、呼吸速率、褐变指数和质构品质均有不同程度的影响。其中,七八成熟对灰树花采后贮藏保鲜效果较佳,贮藏6 d时能保持较好的硬度,较低的失重率、呼吸速率和褐变指数。主成分分析提取3个主成分,累积贡献率达79.305%,咀嚼性和硬度1是影响灰树花贮藏品质的关键指标。研究结果可为灰树花适时采收及保鲜应用提供理论依据和参考。
To clarify the effects of different maturity on the post-harvest storage quality of Grifola frondosa,PET packaging box were used to package fruiting bodies with different maturity,and the weight loss rate,respiration rate,browning index,and textural quality were measured during storage.The results showed that under the condition of 4℃,different maturity had different degrees of influence on the weight loss rate,respiration rate,browning index,and textural quality.Among them,the 70%-80%maturity demonstrated the best preservation effects,maintaining relatively high hardness,along with lower weight loss rate,respiration rate,and browning index after 6 days of storage.The principal component analysis extracted 3 principal components,with a cumulative contribution rate of 79.305%.Chewiness and hardness 1 were identified as key indicators affecting the storage quality of Grifola frondosa.The research results could provide theoretical basis and reference for the application of Grifola frondosa harvesting and preservation.
