7个芒果品种果实品质及类胡萝卜素代谢差异分析

摘要 【目的】旨在了解不同芒果品种之间内在品质及类胡萝卜素合成代谢差异。【方法】选取红象牙、金煌芒、澳洲芒、水仙芒、泰国青芒、桂七芒和台农一号为试验材料,测定可溶性糖、硬度、可溶性固形物、色差、果形指数等生理指标,并利用靶向类胡萝卜素代谢组学,对7个芒果品种进行类胡萝卜素代谢物分析。【结果】在7个芒果品种中,台农一号可溶性固形物含量最高,为17.87%;水仙芒的可溶性糖最高,为29.52 mg/100 g;桂七芒果形指数均大于其他芒果;澳洲芒和水仙芒单果重和果实硬度均高于其他芒果品种;在色差比较中,水仙芒的明亮度最高,台农一号的红绿色最高,桂七芒的黄蓝色和彩度最高。类胡萝卜素代谢组分析发现,在红象牙芒-vs-泰国青芒、金煌芒-vs-泰国青芒、澳洲芒-vs-泰国青芒、桂七芒-vs-泰国青芒和台农一号-vs-泰国青芒中分别发现28、29、31、24和31种差异类胡萝卜素代谢产物,其中,β-隐黄质均为差异最显著的代谢物;在水仙芒-vs-泰国青芒共发现23种差异代谢物,紫黄质肉豆蔻酸酯为差异最显著的代谢物。不同芒果果肉类胡萝卜素含量分析发现,台农一号的β-胡萝卜素含量显著高于其他品种,为32.616μg/g FW;金煌芒的八氢番茄红素含量(26.316μg/g FW)和玉米黄质含量(4.714μg/g FW)均最高;而澳洲芒的紫黄质肉豆蔻酸酯含量显著高于其他品种,为10.945μg/g FW。【结论】在7种供试品种中,台农一号具有相对较好的内在品质(可溶性固形物17.87%)及较高的类胡萝卜素含量(β-胡萝卜素32.616μg/g FW)。研究结果揭示了不同芒果果实品质及类胡萝卜素积累的特征差异,为芒果果实内在品质形成的代谢调控机制提供一定参考,并为芒果新品种选育提供重要方向。 [Objective]The study investigated the metabolic mechanisms to understand the variations in intrinsic quality and carotenoid biosynthesis among different mango cultivars.[Method]Seven varieties as experimental materials,including Hongxiangya,Jinhuang,Aozhou,Shuixian,Taiguoqingmang,Guiqi and Tainong No.,were selected for determination of soluble sugar content,hardness,soluble solids concen tration,color difference value and fruit shape index.Furthermore,targeted carotenoid metabolism analysis was conducted to investigate the carotenoid metabolites present in these seven mango cultivars.[Result]Tainong No.1 exhibited the highest soluble solids content,reaching 17.87%,while Shuixian displayed the highest soluble sugar content at 29.52 mg/100 g.Additionally,Guiqi demonstrated a greater fruit shape index compared to other mango cultivars;Both Aozhou and Shuixian had higher single fruit weight and fruit hardness than other cultivars;In terms of color differentiation comparison the brightness of Shuixian was the highest,the red-green chroma of Tainong No.1 was the highest,and the yellow-blue chroma of Guiqi was the highest.The carotenoid metabolomics analysis identified differential carotenoids in Hongxiangya-vs-Taiguoqingmang(28),Jinhuang-vs-Taiguoqingmang(29),Aozhou-vs-Taiguoqingmang(31),Guiqi-vs-Taiguoqingmang(24)and Tainong No.1-vs-Taiguoqingmang(31).Notablyβ-cryptoxanthin emerged as the most significant differential metabolite across all comparisons;Meanwhile 23 differential metabolites were observed in Shuixian-vs-Taiguoqingmang with curcuminoid zeaxanthin being notably significant.Furthermore,the analysis of carotenoids within the flesh of different mango cultivars indicated that Tainong No.1 had a significantly higherβ-carotene content compared to other cultivars,was 32.616μg/g FW.Jinhuang,on the other hand,exhibited the highest lycopene 8-en-6-ol(26.316μg/g FW)and zeaxanthin(4.714μg/g FW).Additionally,the content of myristicin in Aozhou was significantly higher than that in other cultivars,reaching a level of 10.945μg/g FW.[Conclusion]Among the seven cultivars,the metabolic fingerprinting establishes Tainong No.1 as optimal for both organoleptic quality(soluble solids 17.87%)and provitamin A potential(β-carotene 32.616μg/g FW).These findings provide valuable theoretical foundation for elucidating mango quality formation mechanisms and guiding precision breeding strategies targeting nutritional enhancement.
