摘要
病原菌侵染是导致苹果果实采后品质劣变的主要原因之一。病原菌的侵染不仅会降低果实营养价值并引起腐烂,而且还会在果实内积累对人体健康有潜在危害的次生代谢物质。因此,如何保证苹果果实采后的营养品质和安全性已成为产业中亟待解决的问题。重点介绍了苹果贮藏期间的常见侵染性病害的症状和侵染途径,同时总结了近年来控制这些病害的措施及其作用机理,以期为苹果采后侵染性病害的绿色安全防控提供理论基础。
Pathogenic fungus infection is one of the main reasons for the deterioration of postharvest quality in apples.The infection of pathogenic fungus not only diminishes the nutritional value of fruit and causes decay but also leads to the accumulation of secondary metabolites within the fruit that may pose potential risks to human health.Therefore,ensuring the postharvest nutritional quality and safety of apples emerges as an urgent issue in the industry.This review primarily presents an overview of symptoms and infection pathways of common infectious diseases during apple storage.Additionally,recent measures employed for controlling these diseases and their underlying mechanisms are summarized to establish a theoretical foundation for the green and safe prevention and control of postharvest infectious diseases in apples.
