预制菜食品安全监管现状、问题及对策研究

摘要 作为食品工业进步的产物,预制菜在餐饮行业内占有一席之地,但其发展过程中仍存在现行标准体系难以覆盖全产业链、新兴业态监管存在制度缺口、产品溯源信息披露机制尚未健全等问题。因此,加快国家标准制定、完善监管法规、搭建预制菜产品全国溯源平台,成为推动预制菜产业规范化发展的关键路径。 As a product of the progress of the food industry,prefabricated dishes occupy a place in the catering industry,but in the process of its development,there are still problems such as the current standard system is difficult to cover the whole industry chain,there are institutional gaps in the supervision of emerging formats,and the product traceability information disclosure mechanism is not yet perfect.Therefore,accelerating the formulation of national standards,improving regulatory regulations,and building a national traceability platform for prefabricated food products have become the key paths to promote the standardized development of the prefabricated food industry.
