摘要
通过多指标评价小茴香质量,选择产地为山西省太原市、甘肃省临夏回族自治州、甘肃省兰州市的3种小茴香作为研究对象,测定3种小茴香的燃烧热、微量元素、燃烧稳定性、脂肪、粗纤维、灰分、氨基酸。实验结果表明:3种小茴香燃烧热大小排列顺序为山西太原市>甘肃省临夏回族自治州>甘肃省兰州市;燃烧稳定性排列顺序山西省太原市>甘肃省兰州市>甘肃省临夏回族自治州;粗纤维含量大小顺序为甘肃省临夏回族自治州>山西省太原市>甘肃省兰州市;脂肪含量大小顺序为甘肃省临夏回族自治州>山西省太原市>甘肃省兰州市;灰分含量大小顺序为甘肃省临夏回族自治州>甘肃省兰州市>山西省太原市。3种小茴香燃烧热、热重分析参数、脂肪、粗纤维、灰分、微量元素、氨基酸的综合评价多指标排序为-0.7042,0.7291,-0.0249。3种小茴香燃烧热、热重分析参数、脂肪、粗纤维、灰分、微量元素、氨基酸测定的综合评价多指标排序为甘肃省临夏回族自治州>甘肃省兰州市>山西省太原市。本研究建立了3种小茴香的多指标分析评价体系,为小茴香的研究提供科学的参考。
In this paper,the quality of fennel was evaluated by multiple indexes.Three kinds of fennel with the production areas of Taiyuan City in Shanxi Province,Linxia Hui Autonomous Prefecture in Gansu Province,and Lanzhou City in Gansu Province were selected as the research objects to determine their calorific value of combustion,combustion stability,fat content,crude fiber content,ash content,trace elements,and amino acids.The experimental results showed that the order of the calorific value of combustion of the three kinds of fennel was Taiyuan City in Shanxi Province>Linxia Hui Autonomous Prefecture in Gansu Province>Lanzhou City in Gansu Province;the order of combustion stability was Taiyuan City in Shanxi Province>Lanzhou City in Gansu Province>Linxia Hui Autonomous Prefecture in Gansu Province;the order of the crude fiber content was Linxia Hui Autonomous Prefecture in Gansu Province>Taiyuan City in Shanxi Province>Lanzhou City in Gansu Province;the order of the fat content was Linxia Hui Autonomous Prefecture in Gansu Province>Taiyuan City in Shanxi Province>Lanzhou City in Gansu Province;the order of the ash content was Linxia Hui Autonomous Prefecture in Gansu Province>Lanzhou City in Gansu Province>Taiyuan City in Shanxi Province.The comprehensive evaluation multi-index ranking of the determination of the calorific value of combustion,thermogravimetric analysis parameters,fat content,crude fiber content,ash content,trace elements,and amino acids of the three kinds of fennel was-0.7042,0.7291,-0.0249.The comprehensive evaluation multi-index ranking of the determination of the calorific value of combustion,thermogravimetric analysis parameters,fat content,crude fiber content,ash content,trace elements,and amino acids of the three kinds of fennel was Linxia Hui Autonomous Prefecture in Gansu Province>Lanzhou City in Gansu Province>Taiyuan City in Shanxi Province.This study established a multi-index analysis and evaluation system for the three kinds of fennel,providing a scientific basis for the research on fennel.
