农药残留检测中酶抑制率法速测技术研究

摘要 本文对酶抑制率法快速测定农药残留的研究和应用进行了探讨,对快速检测技术在保证食品安全方面的必要性进行了分析,介绍了酶抑制率法速测技术的测定原理,对测定的操作步骤和注意事项做了较详细的说明。探讨了酶抑制率法速测技术在农药残留检测中的具体应用,包括农贸市场快速筛查农药残留、超市生鲜食品农药残留抽检、餐饮业原材料安全评估、食品生产企业原料快速检测以及进出口食品农药残留合规检查等,以期为农药残留检测中酶抑制率法速测技术相关研究与应用提供参考。 The research and application of enzyme inhibition rate method for rapid determination of pesticide residues were discussed in this paper,the necessity of rapid detection technology in ensuring food safety was analyzed,the principle of enzyme inhibition rate method was introduced,and the operation steps and precautions were explained in detail.The specific application of enzyme inhibition rate method in pesticide residue detection was discussed,including rapid screening of pesticide residues in farmers'markets,sampling of pesticide residues in fresh food in supermarkets,safety assessment of raw materials in catering industry,rapid detection of raw materials in food production enterprises,and compliance inspection of pesticide residues in import and export food.In order to provide some reference for the research and application of enzyme inhibition rate method in pesticide residue detection.
