摘要
大麦芽富含蛋白质、氨基酸、酶类、糖类、酚类、黄酮类、生物碱、维生素、矿物质等营养元素和生物活性物质,大麦发芽可激活自身合成与代谢系统,激活或产生某些酶,增加淀粉和蛋白质的可消化吸收率及必需氨基酸等物质含量,降低某些抗营养物质含量,具有助消化、调节泌乳素、抗氧化、增强机体免疫力,以及降血糖、降血脂、降血压等保健功能。综述了大麦芽的营养成分、功能活性及其在食品加工中的应用现状及应用潜力,以期为未来大麦芽在食品工业等领域中的加工和应用提供思路。
Barley malt was rich in nutrients and biologically active substances such as protein,amino acids,enzymes,sugars,phenols,flavonoids,alkaloids,vitamins and minerals.During barley germination,the synthesis and metabolism system were activated and some enzymes could be activated,the digestion and absorption rate of starch and protein could be improved,as well as the content of essential amino acids,and the content of some anti-nutrients could be reduced.It had health function such as aiding digestion,regulating prolactin,anti-oxidation,enhancing immunity of the body and lowering blood sugar,lipid,and blood pressure.In this paper,the nutritional components,functional activity,and current application status and potential of barley malt in food processing were summarized,in order to provide ideas for the processing and application of barley malt in more fields of the food industry in the future.
