摘要
食品辐照技术是辐照技术与食品科学交叉融合的绿色加工技术,在减少食源性疾病、食品保鲜及保障卫生质量方面具有广阔的应用前景。本文介绍了辐照杀菌技术的原理及特点,阐述了辐照技术在食品保鲜与卫生质量保障应用中的研究进展,探讨了食品辐照技术应用方面存在的问题及未来研究发展方向,以期为辐照技术在食品中的应用提供科学依据。
Food irradiation technology is a food processing technology developed by the intersection of irradiation technology and food science.It has broad application prospects in reducing foodborne diseases,keeping food fresh and ensuring hygiene quality.In this study,the principles and characteristics of irradiation sterilization technology were analyzed.And then,the research progress of irradiation technology in the application of food preservation and hygiene quality assurance were expounded.Moreover,the problems in the application of food irradiation technology and the future research were discussed and the development prospects were previewed.The purpose was to provide scientific basis for the application of irradiation technology in food.
