摘要
沙棘是一种药食同源的植物,含有丰富的营养价值,沙棘果实中富含黄酮、酚酸、维生素、矿物质、类胡萝卜素等物质,具有抗氧化、抗衰老等作用。在沙棘产品生产过程中,会产生大量的副产物,对沙棘副产物开发利用可以避免资源浪费和环境污染,还可实现副产物的高值化利用。综述了沙棘中的黄酮、酚酸、多糖、维生素等活性成分及沙棘在食品中的应用现状,为沙棘产业的可持续性发展提供参考。
Sea buckthorn is a medicinal and edible plant with rich nutritional value.Sea buckthorn fruit is rich in flavonoids,phenolic acids,vitamins,minerals,carotenoids and other substances,which have antioxidant and anti-aging effects.In the production process of seabuckthorn products,a large amount of by-products are generated.Developing and utilizing seabuckthorn by-products can avoid resource waste and environmental pollution,and also achieve high-value utilization of by-products.This article summarizes the active ingredients such as flavonoids,phenolic acids,polysaccharides,vitamins,etc.in seabuckthorn and the current application status of seabuckthorn in food,providing reference for the sustainable development of seabuckthorn industry.
