摘要
为提高蛋白酶水解法提取扇贝多肽的效率,通过微波前处理设置不同功率、不同时间和不同温度,采用单因素试验和响应面法优化工艺参数,探究酶解微波前处理对扇贝蛋白酶水解度的影响。结果表明,微波前处理的最佳工艺参数为微波功率673 W,微波时间8.5 min,微波温度73.0℃。在此条件下,经碱性蛋白酶酶解,水解度达27.97%,比未经过微波前处理的扇贝蛋白水解度高出12.89%。综上所述,微波前处理是提高扇贝蛋白酶解度的一种有效途径。
To optimize the process condition of microwave pretreatment protease hydrolysis for extracting scallop protein and to improve its enzymatic hydrolysis degree,single factor experiments and response surface methodology were used to optimize the microwave pretreatment process parameters under the same enzymatic hydrolysis condition.The results showed that the optimal process parameters for microwave pretreatment were microwave power 673 W,microwave time 8.5 min,and microwave temperature 73.0℃.Under these conditions,after alkaline protease hydrolysis,the degree of hydrolysis of scallop protein reached 27.97%,which was 12.89%higher than that of the scallop protein without microwave pretreatment.In summary,microwave pretreatment is an effective way to improve the enzymatic hydrolysis of scallops.
