摘要
酱香型白酒以“量少质优”为特点,在全国白酒行业中有着重要的地位。新酒的老熟离不开储存容器,维持优质基酒稳定品质更离不开容器的选择。关于酱香型白酒品质的研究多集中于原料种类、酿造环境中的微生物、风味化合物等,陶坛对酱香型白酒品质影响没有系统的研究报告。本文以白酒传统贮存容器陶坛为研究对象,探讨主要影响酱香型白酒新酒贮存品质的因素,并综述了陶坛的孔隙、金属元素、陶坛盛满量等对酱香型白酒风味的影响,展望了白酒储存容器的研究方向。
Jiangxiang Baijiu is characterized by low yield and high quality,and holds an important position in Baijiu industry.The aging of newly-pro-duced liquor needs storage containers,and the choice of containers directly affects the quality and stability of the crude liquor.Research on the quality of Jiangxiang Baijiu mainly focuses on the types of raw materials,microorganisms in fermentation environment,flavor compounds,etc.There is no systematic research report on the influence of pottery jars on the quality of Jiangxiang Baijiu.This paper takes pottery jars as the research object,dis-cusses the main factors affecting the storage quality of Jiangxiang Baijiu,summarizes the influence of the pores,metal elements and volume of pottery jars on the flavor of Jiangxiang Baijiu,and proposes new research directions of Baijiu storage containers.
