摘要
为明确新疆南疆不同产区间灰枣(Ziziphus jujuba cv.Huizao)果实品质的差异性,本研究选择以新疆南疆4个枣产区(阿克苏产区、喀什产区、和田产区和巴州产区)的78个灰枣园果实为试验材料,采用主成分分析法对不同产区的果实品质进行综合评价。结果表明:新疆南疆灰枣主产区果实外观及营养品质的变异系数介于4.94%~33.00%之间,质地品质变异系数介于11.13%~57.02%之间。阿克苏产区果形指数(1.46)和糖酸比(82.38)显著高于和田产区。和田产区可滴定酸含量(4.18 mg·g^(-1))和类黄酮含量(0.62 mg·g^(-1))显著高于阿克苏产区、巴州产区和喀什产区。巴州产区果实内聚性、弹性、胶粘性和咀嚼性较高。果实品质综合评价结果:和田产区>巴州产区>阿克苏产区>喀什产区。
In order to clarify the differences in fruit quality of Ziziphus jujuba cv.Huizao in different producing areas of Southern Xinjiang,78 Huizao orchards in four jujube producing areas(Aksu producing area,Kashgar producing area,Hotan producing area and Bazhou producing area)in Southern Xinjiang were selected as experimental materials.The principal component analysis was used to comprehensively evaluate the fruit quality of different producing areas.The results showed that the coefficient of variation of fruit appearance and nutritional quality in the main producing areas of jujube in Southern Xinjiang was between 4.94%-33.00%,and the coefficient of variation of texture quality was between 11.13%-57.02%.The fruit shape index(1.46)and sugar acid ratio(82.38)in Aksu producing area were significantly higher than those in Hotan producing area.The titratable acid content(4.18 mg·g^(-1))and flavonoid content(0.62 mg·g^(-1))in Hotan producing area were significantly higher than those in Aksu,Bazhou and Kashgar producing area.The cohesion,elasticity,gumminess and chewiness of fruits in Bazhou were higher.The comprehensive evaluation results of fruit quality:Hotan producing area>Bazhou producing area>Aksu producing area>Kashgar producing area.
