摘要
以圣女果为试材,采用不同浓度辣根素-壳聚糖复合液(1.25%壳聚糖+0.2%、0.4%、0.6%、0.8%辣根素)涂膜处理方法,研究了常温(20℃)条件下复合保鲜剂对采后圣女果贮藏过程中失重率、腐烂率、可溶性固形物、可滴定酸及维生素C含量的影响,筛选出最佳浓度组合,以期为圣女果采后绿色天然保鲜技术研发及推广应用提供参考依据。结果表明:不同浓度辣根素-壳聚糖复合液涂膜处理方法均能有效降低果实失重率、防止腐烂变质,延缓可溶性固形物、可滴定酸含量的下降,降低维生素C含量的损失,起到了较好地保鲜作用并不同程度延长了果实贮藏期。其中1.25%壳聚糖+0.8%辣根素处理对圣女果的保鲜效果最优(除防腐烂效果略逊于0.2%辣根素组)。
Taking cherry tomatoes as the test materials,the effects of different concentrations of horseradish essential oil-chitosan composite coating solutions(1.25%chitosan+0.2%,0.4%,0.6%,and 0.8%horseradish essential oil)on weight loss rate,decay rate,soluble solids content,titratable acid content,and vitamin C content during storage at room temperature(20℃)were investigated,in order to provide reference for the research and promotion of green and natural preservation technology for the postharvest cherry.The results showed that all tested concentrations of the composite coating effectively reduced fruit weight loss,inhibited decay,delayed the decline of soluble solids and titratable acid contents,and minimized vitamin C loss,thereby extending the storage.period to varying degrees.Among the treatments,the combination of 1.25% chitosan + 0.8% horseradish essential oil exhibited the best overall preservation effect (except for its slightly inferior decay inhibition compared to the 0.2% horseradish essential oil group).
