常温超高压提取草莓多酚及其在冰激凌加工中的应用

摘要 为建立一种超高压条件纯水提取草莓多酚的方法,优化超高压最终提取条件为,粒径≤1 cm的草莓颗粒,按照最大固液比为1∶15(W/V)加入纯净水。放入高压仓中,快速加压至600 MPa,保持5 min,完成提取。提取液中草莓多酚平均含量为0.67 mg/mL,并含有31.3μg/mL的维生素C,0.47μg/mL的维生素E,0.02μg/mL的胡萝卜素,说明了超高压提取的高效性。提取液有极强的抗氧化活性,自由基清除率>83%。同时超高压条件下能杀灭体系中所有细胞结构的微生物,提取液中菌落总数为0 CFU/g。提取液在常温密封条件下保存720 d没有明显变质腐败现象。该方法是一种高效、环保、多功能的新型提取方法。后续利用草莓多酚代替明胶,应用于冰激凌等食品加工过程中,达到增稠、塑形、抗融化的目的。草莓多酚是一种新型,无副作用的食品添加剂。 A method for extracting strawberry polyphenols using ultra-high pressure(UHP)with pure water was established.The extraction parameters were optimized as follows:strawberries were crushed to a particle size of less than 1 cm and mixed with water at a solid-to-liquid ratio of 1∶15(W/V).This mixture was subjected to UHP treatment by rapidly pressurizing to 600 MPa in a high-pressure chamber and holding for 5 minutes to complete extraction.The extracted solution contained an average strawberry polyphenol content of 0.67 mg/mL.The extract also contained other valuable compounds,including vitamin C(31.3μg/mL),vitamin E(0.47μg/mL),and carotene(0.02μg/mL).Furthermore,the extract exhibited strong antioxidant capacity,with a free radical scavenging rate exceeding 83%.Significantly,the UHP treatment also resulted in complete microbial inactivation,yielding an extract with a total colony count of 0 CFU/g.The extract showed no obvious signs of spoilage or degradation after storage at room temperature for 720 days.This optimized UHP method was demonstrated as an efficient,environmentally friendly,and multifunctional novel extraction technique.Subsequently,strawberry polyphenols was used as a functional ingredient in ice cream,successfully replacing gelatin to provide thickening,shaping,and anti-melting properties.The results suggested this UHP-derived strawberry polyphenols were identified as a novel,side-effect-free food additive.
