摘要
葡萄枝条是一种葡萄园废弃物,富含纤维素、半纤维素、木质素和酚类等化合物。葡萄枝条具有部分替代橡木、二氧化硫、活性炭、阿拉伯胶等葡萄酒酿酒添加剂的潜在利用价值。本文综述了葡萄枝条的成分组成及其在酿酒中的辅料化应用研究进展,并从增强葡萄酒的健康属性和推动自然葡萄酒的发展两个方面对葡萄枝条在葡萄酒领域的应用前景进行展望,最后从安全性评估、技术研究和产业化推广等方面探讨了葡萄枝条用于酿酒所面临的问题与挑战,旨在为葡萄枝条在葡萄酒酿造领域的深入研究和高效高值利用提供理论参考。
Grape canes are a type of vineyard waste,rich in cellulose,hemicellulose,lignin,phenols and other compounds.Grape canes have the potential to partially serve as substitutes for winemaking additives,including oak,sulfur dioxide,activated carbon,and arabic gum.In this paper,the composition of grape canes and the research progress on their application as auxiliary raw materials in winemaking were reviewed.This paper also presented a prospect for the application of grape canes in the wine industry,highlighting their enhanced health attributes of wine and contribution to the development of natural wines.Finally,the issues and challenges associated with their use in winemaking were discussed,with a focus on safety evaluations,technical research and promotion of industrialization,aiming to provide theoretical references for the in-depth study and efficient,high-value utilization of grape canes in the winemaking field.
