摘要
文章以西藏山南市丁拉村当地牧民家庭自制传统发酵牦牛乳制品(奶渣、奶皮、奶疙瘩)为材料,结合传统纯培养方法和细菌16S rRNA基因序列分析方法,进行乳酸菌的分离鉴定。筛选得到78株乳酸菌,为5个属11个种,包括1株绿色魏斯氏菌Weissella viridescens,1株食窦魏斯氏菌Weissella cibaria,2株屎肠球菌Enterococcus faecium,3株乳酸片球菌Pediococcus acidilactici,17株乳酸乳球菌Lactococcus lactis,1株台湾乳球菌Lactococcus taiwanensis,11株副干酪乳杆菌Lacticaseibacillusi paracasei,12株植物乳植杆菌Lactiplantibacillus plantarum,7株罗伊氏粘液乳杆菌Limosilactobacillus reuteri,15株瑞士乳杆菌Lactobacillus helveticus,8株发酵乳杆菌Lactobacillus fermentum。该研究揭示了西藏地区传统发酵牦牛乳制品丰富的乳酸菌资源,可为筛选优良乳酸菌菌株提供菌种来源,也为探究传统发酵乳制品中微生物多样性奠定了前期基础。
The article was based on the traditional fermented yak dairy products(milk residue,milk skin and milk lumps)homemade by local herder families in Dingla village,Shannan city,Tibet.,and the isolation and identification of lactic acid bacteria were carried out by combining the traditional pure culture method and the bacterial 16S rRNA gene sequence analysis.The analysis and identification results showed that a total of seventy-eight strains of Lactobacillus were screened for five genera and eleven species,including one strain of Weissella viridescens,one strain of Weissella cibaria,two strains of Enterococcus faecium,three strains of Pediococcus acidilactici,seventeen strains of Lactococcus lactis,one strain of Lactococcus taiwanensis,eleven strains of Lacticaseibacillusi paracasei,twelve strains of Lactiplantibacillus plantarum,seven strains of Limosilactobacillus reuteri,fifteen strains of Lactobacillus helveticus,eight strains of Lactobacillus fermentum.This study demonstrated that the traditional fermented yak dairy products in Tibet are rich in lactic acid bacteria resources,which can provide a source of strains for the subsequent screening of good lactic acid bacteria strains,and also lays a foundation for exploring the microbial diversity in traditional fermented dairy products.
