摘要
为了探求一种更快、更准确的方法识别核桃油是否掺假,该研究采用了三维荧光光谱仪对不同油样进行光谱采集,同时还采集了油样的紫外可见光谱数据作为对比分析。将菜籽油、玉米油和大豆油分别按照0.5%、1%、5%、10%、20%、30%、50%、80%的比例掺入到核桃油中,制备二元掺假样本。并选取3种不同产地的一级冷榨核桃油,探讨不同地区的核桃油差异。将样品进行光谱采集后,使用主成分分析法(Principal component analysis,PCA)和偏最小二乘辨别分析(Partial least squares discriminant analysis,PLS-DA)及多维偏最小二乘辨别分析(N-way partial least squares discriminant analysis,N-PLS-DA)对光谱信息进行分析处理。结果表明,采用PCA能够区分核桃油与掺伪油样,但在三维荧光下,对于0.5%、1%菜籽油和0.5%玉米油区分效果不佳;在紫外可见光谱下,则只能区分出核桃油是否掺假,并不能识别出具体掺假油样。采用PLS-DA及N-PLS-DA时,在三维荧光下,能够完全识别出核桃油是否掺伪,且能具体识别出掺伪油样,准确度高达100%,并且在建立的校正模型上也取得了较好的线性结果;基于紫外可见光谱的结果与三维荧光相似,仅在识别掺伪菜籽油时出现了一次识别错误,但总体较好。该研究对于市场中的核桃油掺假提供了新的思路,具有较好的应用前景。
In order to find a faster and more accurate method to identify whether walnut oil is adulterated,three-dimensional fluorescence spectrometer was used to collect spectra of different oil samples,and ultraviolet-visible spectral data of oil samples were also collected as a comparative study.Rapeseed oil,corn oil and soybean oil were mixed into walnut oil in the proportions of 0.5%,1%,5%,10%,20%,30%,50%and 80%respectively to prepare binary adulterated samples.Three kinds of first-grade cold-pressed walnut oil from different producing areas were selected to discuss the differences of walnut oil in different regions.After the samples were collected,the spectral information was analyzed by principal component analysis(PCA),partial least squares discriminant analysis(PLS-DA)and n-way partial least squares discriminant analysis(N-PLS-DA).The results show that PCA can distinguish walnut oil from adulterated oil samples,but based on three-dimensional fluorescence,0.5%,1%rapeseed oil and 0.5%corn oil can’t be well distinguished.Based on the ultraviolet-visible spectrum,we can only distinguish whether walnut oil is adulterated,but the specific adulterated oil sample can’t be identified.When PLS-DA and N-PLS-DA are used,whether walnut oil is adulterated or not can be completely identified based on threedimensional fluorescence,and the adulterated oil sample can be specifically identified,with the accuracy as high as 100%,and good linear results are also obtained on the calibration model established later.Based on the ultraviolet-visible spectrum,the results obtained are similar to those of three-dimensional fluorescence,but there was a recognition error when identifying adulterated rapeseed oil,but it was good overall.This study provides a new idea for adulteration of walnut oil in the market and has a good application prospect.
