摘要
以羧甲基纤维素、聚乙烯醇及新疆黑枸杞色素提取物为原料,利用物理冻融法制备智能指示标签,研究了水凝胶的理化特性以及其在冷鲜羊肉贮藏过程中对品质的影响。实验结果显示,制备的水凝胶具有优异的pH值响应性和溶剂敏感性,同时所制备的指示标签也表现出良好的pH值敏感性和氨气敏感性。与空白组相比,水凝胶和智能指示标签的加入均能延长羊肉保鲜期,综合判定羊肉空白组、对照组、实验组分别在第6、8、12天由一级鲜度转至二级鲜度,分别在第8、10、16天腐败变质。智能指示标签的应用不仅可以监测肉品的新鲜度,还有助于延长肉品的保质期。研究结果为新疆多浪羊肉贮运保鲜及新鲜度的智能监控提供了理论依据。
In this paper,carboxymethyl cellulose,polyvinyl alcohol,and Xinjiang black wolfberry pigment extracts were used as raw materials to prepare intelligent indicator labels by physical freeze-thaw method,and their physicochemical properties and effects on the quality of chilled mutton during storage were studied.The results show that the prepared hydrogel has good pH responsiveness and solvent sensitivity,and the prepared indicator label has good pH sensitivity and ammonia sensitivity.Compared with the blank group,the addition of hydrogel and intelligent indicator label can extend the meat preservation period.It is comprehensively judged that the blank group,control group and experimental group of mutton changed from the first grade freshness to the second grade freshness on the 6th,8th and 12th days respectively,and deteriorated on the 8th,10th and 16th days respectively.It shows that the intelligent indicator label can not only monitor the freshness of meat,but also extend the freshness period of meat.The research results in this paper provide a theoretical basis for the intelligent monitoring of the freshness of Xinjiang Duolang mutton during storage,transportation and marketing.
