摘要
虾、蟹类水产品具有较高的营养价值和食用价值。传统的营养分析局限于单一成分的检测,难以全面反映整体营养特性。代谢组学是研究食品质量和安全性的重要方法,可以通过高通量、高灵敏度的技术手段全面分析虾、蟹体内的代谢物组成,为水产品营养品质评价提供了新的视角。本文探讨了代谢组学在虾、蟹类水产品营养品质分析中的应用,并展望了虾、蟹品质检测和分析方法未来的发展趋势。
Shrimp and crab aquatic products have high nutritional value and edible value.Traditional nutritional analysis is limited to the detection of a single component,which is difficult to fully reflect the overall nutritional characteristics.As an important method to study food quality and safety,metabolomics can comprehensively analyze the composition of metabolites in shrimp and crab through high-throughput and high-sensitivity technical means,provides a new perspective for the nutritional quality evaluation of aquatic products.This paper explores the application of metabolomics in the nutritional quality analysis of shrimp and crab products,and looks forward to future trends in quality testing and analytical methods for shrimp and crab.
