摘要
以西北地区池塘养殖的澳洲淡水龙虾(Cherax quadricarinatus)为研究对象,对其肌肉成分组成和营养价值进行分析。结果显示:澳洲淡水龙虾肌肉中粗蛋白含量为(16.7±1.51)%,粗脂肪含量为(0.3±0.02)%,粗灰分含量为(1.58±0.12)%;共检测出17种氨基酸,其中必需氨基酸含量为(6.49±0.05)%,占所含氨基酸总量38.86%,必需氨基酸与非必需氨基酸比值为0.825,高于联合国粮食及农业组织/世界卫生组织的优质蛋白质评价标准。澳洲淡水龙虾其肌肉中检测出11种脂肪酸,4种主要矿物质,比例高于大部分肉类及一些常见水产品。评价结果表明,西北地区池塘养殖的澳洲淡水龙虾为高蛋白、低脂肪、肉质鲜美、营养价值较高的优质淡水虾类。
Nutritional compositions were analyzed in muscles of Cherax quadricarinatus cultured in ponds in Northwest China.The results showed that the crude protein content in muscle of Cherax quadricarinatus was 16.7%±1.51%,the crude fat content was 0.3%±0.02%and the crude ash content was 1.58±0.12%.A total of 17 amino acids were detected in muscle of Cherax quadricarinatus,of which the essential amino acid content was 6.49&±0.05%,accounting for 38.86%of the total amino acids,and accounting for 82.5%of non-essential amino acids,higher than the standard for quality protein evaluation of FAO/WHO.There are 11 fatty acids and 4 major minerals detected in the muscle of Cherax quadricarinatus,which is higher than most meat and some common aquatic products.The evaluation results showed that the Cherax quadricarinatus cultured in the pond in Northwest China was a high-quality freshwater shrimp with high protein,low fat,delicious meat and high nutritional value.
