摘要
为了研究冀北水稻不同品种含有的香气成分,采集承德地区具有代表性的水稻样品为试验材料,采用顶空固相微萃取-气质联用技术,对其所含的挥发性物质进行检测。结果表明:10份水稻样品具有挥发性物质16种,其中呈香物质12种。醛类化合物和芳香族化合物是水稻呈香的主要物质,酯类化合物和醇类化合物也对水稻呈香有着重要的作用。华北承科2035号呈香物质含量最高,为20.17%,属于长粒粳稻。此外,肥料和种植技术的应用也对提高水稻香气、改善水稻品质有着重要作用。该研究旨在为高品质水稻的生产和深度开发利用提供理论依据。
In order to explore the aroma components contained in different varieties of rice in northern Hebei,representative rice samples from Chengde area were collected as experimental materials.The volatile substances contained in it were detected by headspace solid-phase microextraction-gas chromatography-mass spectrometry.The results showed that there were 16 common volatile substances in 10 rice samples,including 12 aromatic substances.Aldehydes and aromatic compounds are the main substances that contribute to the aroma of rice,while esters and alcohols also make important contributions to the aroma of rice.Huabei Chengke 2035 has the highest content of aromatic substances,accounting for 20.17%,belonging to long grain japonica rice.In addition,the application of fertilizers and planting techniques also plays an important role in improving the aroma and quality of rice.This study provides a theoretical basis for the production and deep development and utilization of high-quality rice.
