摘要
为探究地方鸡与引入品牌鸡的差异和开发利用价值,试验采用液相色谱-质谱联用技术(LC-MS)对60日龄大围山微型鸡和AA肉鸡胸肌组织进行代谢组学分析。结果显示:两个鸡种间共鉴定出差异代谢物39种,包括脂质类12种、氨基酸和类似物8种、有机酸及其衍生物6种、核苷酸和类似物4种以及各种有机化合物9种。其中,在大围山微型鸡中上调表达的有14种,下调表达的有25种。研究表明:脂质类和氨基酸类差异代谢物是两个鸡种胸肌风味和品质差异的重要原因;有机酸类差异代谢物说明AA肉鸡胸肌的抗氧化能力、热应激免疫能力优于大围山微型鸡;核苷酸类差异代谢物说明大围山微型鸡胸肌的部分抗病力优于AA肉鸡。
In order to explore the differences and development value between local chickens and foreign chickens,the experiment used liquid chromatography-mass spectrometry(LC-MS)to perform metabolomics analysis on the breast muscle tissue of 60 day age Daweishan mini chicken and AA broiler.The results showed that a total of 39 differential metabolites were identified between the two chicken breeds,including 12 lipids,8 amino acids and analogues,6 organic acids and their derivatives,4 nucleotides and analogues,and 9 various organic compounds.Among them,14 species were up-regulated and 25 species were down regulated in Daweishan mini chickens.The results indicated that the differential metabolites of lipids and amino acids were important reasons for the differences in flavor and quality of breast muscles between two chicken breeds;The differential metabolites of organic acids indicated that the antioxidant capacity and heat stress immunity of AA broiler breast muscles were superior to those of Daweishan mini chickens;The differential metabolites of nucleotides indicated that the partial disease resistance of the breast muscle of Daweishan mini chickens was superior to that of AA broiler.
