Research Progress on Processing and Utilization of Wild Vegetables

摘要 我国拥有丰富的野菜资源,近年来,随着人们健康意识的提升与饮食观念的转变,野菜逐渐重返大众餐桌,受到越来越多的关注。文章综述了野菜的价值及其加工利用现状,重点探讨了其在食品加工领域的创新应用。在加工利用方面,野菜被广泛应用于面食烘焙、小吃快餐、饮品、干制品、营养保健品及酱汁调料等领域,展现了其在现代食品工业中的开发潜力。 China has rich resources of wild vegetables.In recent years,with the improvement of people's health awareness and the change of dietary concept,wild vegetables have gradually returned to the public table and received more and more attention.The value of wild vegetables and its processing and utilization status were reviewed,and its innovative application in the field of food processing was discussed.In terms of processing and utilization,wild vegetables are widely used in the fields of baked goods,snacks,fast food,beverages,dried products,nutritional health products and sauce seasonings,demonstrating their significant potential in modern food industry development.
