摘要
以牡丹花蕊、麦芽糊精、甘露醇、硬脂酸镁、大米肽、奶粉为原料,采用干法制粒技术制作牡丹花蕊含片.以羟基自由基清除率为指标并结合感官评价,筛选出5个主要因素(牡丹花蕊、麦芽糊精、甘露醇、大米肽、奶粉)的较优添加量,然后在单因素基础上,应用Spss软件对5因素进行正交优化试验.结果表明,5因素最适添加量分别为:甘露醇30%、牡丹花蕊15%、麦芽糊精20%、大米肽0.3%、奶粉50%.正交试验结果发现,5因素对牡丹花蕊含片感官和抗氧化作用的影响从大到小依次为:牡丹花蕊(B)>奶粉(C)>甘露醇(E)>大米肽(A)>麦芽糊精(D),牡丹花蕊含片最佳配方A3B3C3D1E2(大米肽0.25%、牡丹花蕊20%、奶粉50%、麦芽糊精30%、甘露醇35%).牡丹花蕊含片的研制充分利用了废弃物的营养价值,拓宽了牡丹花蕊在食品领域的应用,为牡丹资源的深度开发、利用提供了新思路.
Taking peony stamens,maltodextrin,mannitol,magnesium stearate,rice peptides and milk powder as raw materials,this article uses dry granulation technology to produce peony stamen tablets.It uses hydroxyl radical scavenging rate as an indicator,combined with sensory evaluation,to screen the optimal addition amounts of five main factors(peony stamen,maltodextrin,mannitol,rice peptide,milk powder),and then conducts orthogonal optimization experiments using SPSS software.The results show that the optimal addition amounts for the five factors are 30%mannitol,15%peony stamen,20%maltodextrin,0.3%rice peptide and 50%milk powder.The results of the orthogonal experiment show that the order of the effects of the five factors on the sensory and antioxidant effects of peony stamen tablets is peony stamen(B)>milk powder(C)>mannitol(E)>rice peptide(A)>maltodextrin(D),and the optimal formula for peony stamen tablets is A 3 B 3 C 3 D 1 E 2(rice peptide 0.25%,peony flower bud 20%,milk powder 50%,maltodextrin 30%,mannitol 35%).The development of peony stamen tablets fully utilizes the nutritional value of waste,expands the application of peony stamens in the food field,and provides new ideas for the deep development and utilization of peony resources.
