摘要
以香菇和羊肚菌(干样和鲜样)2种食用菌4组样品为研究对象,采用微波消解-电感耦合等离子体质谱法测定武汉市54个市售香菇(Lentinula edodes)和羊肚菌(Morchella esculenta)样品中的重金属Cr、As、Cd、Pb元素含量;采用靶标危害系数(THQ)法评估人体每日通过食用菌摄入重金属所带来的健康风险。结果表明,2种食用菌鲜样中4种重金属均未出现超标情况;羊肚菌干样中Cd超标率为8.33%,香菇干样中Cd超标率为16.67%;2种食用菌中4种重金属含量均表现出干样高于鲜样;在干样和鲜样中,均表现出羊肚菌Cr和Pb含量高于香菇,而香菇的As和Cd含量均高于羊肚菌。2种食用菌干样的THQ均大于其鲜样,除羊肚菌鲜样外,其他3组样品的THQ均表现为Cd>Cr>As>Pb;成人摄入食用菌中重金属的THQ和THQ_(total)均小于儿童;不同年龄人群膳食摄入食用菌中4种重金属的THQ均小于1,说明通过膳食途径摄入市售香菇和羊肚菌中重金属的健康风险较低。
The contents of heavy metals Cr,As,Cd and Pb in 54 commercially available samples(fresh sample and dry sample)of Lentinula edodes and Morchella esculenta in Wuhan City were determined by microwave digestion-inductively coupled plasma mass spectrometry.The target hazard quotient(THQ)method was used to evaluate the health risk of heavy metals ingested by edible fungi every day.The results showed that the four heavy metals in the fresh samples of two edible fungi did not exceed the standard.The over standard rate of Cd in dried samples of Morchella esculenta was 8.33%,and the over standard rate of Cd in dried samples of Lentinula edodes was 16.67%.The contents of four heavy metals in the two edible fungi showed that the dry samples were higher than the fresh samples.In both dry and fresh samples,the contents of Cr and Pb in Morchella esculenta were higher than those in Lentinus edodes,while the contents of As and Cd in Lentinus edodes were higher than those in Morchella esculenta.The THQ of dried samples of the two edible fungi was higher than that of fresh samples.Except for the fresh sample of Morchella esculenta,the THQ of the other samples showed Cd>Cr>As>Pb.The THQ and THQ_(total) of heavy metals in edible fungi in adults were smaller than those in children.The THQ of four heavy metals in edible fungi of different age groups was less than 1,indicating that the health risk of heavy metals in two kinds of commercially available Morchella esculenta and Lentinus edodes was low.
