某地养殖环节海产品中铝含量状况分析 被引量:1

Analysis on aluminum content condition of seafood during aquaculture in a certain area

摘要 目的了解某地养殖环节多种海产品中铝含量状况,为食品安全监管提供数据支持。方法抽取2018—2020年辖区部分养殖场所养殖成熟并准备上市的鱼、虾、海参、螃蟹、牡蛎、扇贝及蛤蜊等7种海产品共520份,采用等离子体电感耦合-串联质谱法(ICP-MS)测定样品中的铝含量,利用SPSS统计软件进行分析。结果520份样品中铝检出率为97.88%,铝含量均值、中位数、P25、P75和最大值分别为56.22、16.23、3.09、87.63及620.92 mg/kg,鱼、虾、海参检出率分别为92.86%、96.92%及95.79%,螃蟹、牡蛎、扇贝及蛤蜊检出率均为100.00%,各类海产品铝含量不同,部分海产品铝含量比较,差异均有统计学意义(P<0.05)。不同产地铝含量差异无统计学意义(P>0.05)。结论该地海产品中铝检出率较高,尤其是螃蟹、牡蛎、扇贝及蛤蜊样品全部检出,需进一步查明海产品铝的来源,采取有效措施,以降低海产品铝污染情况。 Objective To understand aluminum content of various seafoods druing aquaculture in a certain area,and to provide data support for food safety supervision.Methods A total of 520 samples of 7 types of seafood,including fish,shrimp,sea cucumber,crab,oyster,scallop and clam,that had been matured and ready for market in some aquaculture facilities within the jurisdiction from 2018 to 2020 were selected.The contents of aluminum in the sample were detected using inductively coupled,plasma tandem mass spectrometry(ICP-MS).SPSS statistical software was used for analysis.Results The detection rate of aluminum in 520 samples was 97.88%,with mean,median,P25,P75 and maximum aluminum contents of 56.22,16.23,3.09,87.63 and 620.92 mg/kg,respectively.The detection rates of fish,shrimp and sea seepage were 92.86%,96.92%and 95.79%,respectively.The detection rates of crabs,oysters,scallops and clams were all 100.00%.Different types of seafood had different aluminum contents,and aluminum content of some seafood were compared,and the difference was statistically significant(P<0.05).There was no statistically significant difference in aluminum content between different production areas(P<0.05).Conclusion The detection rate of alum inum in seafood in this area was hig h,especially crabs,oysters,scallops and clam s sam ples were all detected.It was necessary to further identify the source of alum inum in seafood and tak e effective m easures to reduce alum inum pollution in seafood.
