摘要
针对百合鳞茎采后贮藏易褐变、腐烂等品质劣变问题,为探明不同贮藏温度条件下各种理化指标变化规律,以兰州百合为材料,设计0、4、8、14、20℃5个贮藏温度,对不同贮藏温度下百合鳞茎的失重率、硬度、色值、抗坏血酸含量、可溶性固形物含量、呼吸强度、丙二醛含量、多酚氧化酶活性和过氧化物酶活性的变化进行研究。结果表明,4℃下贮藏,百合的呼吸强度和失重率最低,硬度、VC含量和可溶性固形物含量最高,过氧化物酶、多酚氧化酶活性和丙二醛含量最低,有效延缓了百合的褐化及衰老程度,优于0、8、14、20℃贮藏。其中,0℃贮藏18 d时,百合鳞茎出现橡皮状冷害症状,表面腐烂褐变加剧,8、14、20℃贮藏,百合鳞茎的软化、褐变、失水严重,贮藏期短。研究结果为兰州百合精准冷链贮运保鲜提供了理论依据。
In response to the quality deterioration of lily bulbs,such as browning and rotting during post-harvest storage,this study aims to find out the changes in various physicochemical indexes under different storage temperature conditions.Using Lanzhou lily as the material,five storage temperatures(0,4,8,14 and 20℃)were designed.The study examined the changes in weight loss rate,hardness,color value,ascorbic acid content,soluble solids content,respiration intensity,malondialdehyde(MDA)content,polyphenol oxidase activity and peroxidase activity of lily bulbs under different storage temperatures.The results showed that the storage at 4℃exhibited the lowest respiration intensity and weight loss rate,the highest hardness,VC and soluble solids content,and the lowest peroxidase,polyphenol oxidase activities and MDA content,which effectively delayed browning and senescence of the lilies,outperforming those stored at 0,8,14 and 20℃.Among them,when stored at 0℃for 18 d,bulbs showed symptoms of rubbery cold damage,with exacerbated surface rot and browning.At 8,14 and 20℃,the bulbs experienced severe softening,browning,and loss of water severely,leading to intensified physiological senescence and a short storage period.The results of the study provide a theoretical basis for the precise cold chain storage and transportation of Lanzhou lilies for preservation.
