摘要
电感耦合等离子体质谱(Inductively Coupled Plasma Mass Spectrometry,ICP-MS)是目前检测金属及某些非金属元素效率最高的方法之一,该法检测效率高,能实现多元素快速同测,且检测限极低,尤其适用于待测样品中痕量元素的检测。这些特点使其可广泛应用于食品中有益元素含量检测、重金属污染水平检测及特定元素形态分析检测等方向,且能够实现样品的大批量多元素测定。本文介绍了ICP-MS的基本原理和优势特点,综述了近几年来ICP-MS技术在食品检测领域不同类别的应用实例和意义,为ICP-MS技术在今后食品多元素检测领域的进一步应用方向提供一定参考。
Inductively coupled plasma mass spectrometry(ICP-MS)is one of the most efficient methods to detect metals and some nonmetallic elements currently.This method has high detection efficiency,can achieve rapid simultaneous testing of multiple elements,and has extremely low detection limit,especially suitable for the detection of trace elements in samples.These characteristics make it widely used in the detection of beneficial elements content in food,heavy metal pollution level and morphology analysis and detection of specific elements,and can realize the multi-element determination of samples in large quantities.This article introduces the basic principle and advantages of ICP-MS,and reviews the application examples and significance of ICPMS technology in different categories of food testing in recent years,it provides some reference for the further application of ICP-MS technology in the field of multi-element detection of food.
