Matrix-assisted laser resolved ionization time of flight mass spectrometry(MALDI-TOF MS),as a high-sensitivity and high-speed mass spectrometry technique,has been widely utilized in the rapid detection of dairy products.This paper first provides an in-depth introduction to the principles,development,classification,advantages,and limitations of MALDI-TOF MS technology,followed by a detailed discussion of its application progress in the field of dairy products.Lastly,it forecasts the future development trends of MALDI-TOF MS technology in the dairy product sector,offering a comprehensive perspective for quality control and rapid detection of dairy products,thereby facilitating the extensive application and further advancement of this technology in the dairy product industry.
