擦手纸在不同介质(空气和水)中气味成分的研究 被引量:1

摘要 为提高擦手纸的气味品质,研究其在不同介质(空气和水)中气味成分及气味贡献。采用静态顶空固相微萃取-气相色谱-质谱联用技术(Static Headspace Solidphase Microextraction-Gas Chromatography-Mass Spectrometry,HS-SPME-GC-MS)测试擦手纸在两种介质(空气、水)中的气味成分,结合相对气味活度值(Relative Odor Activity Value,ROAV)和感官评估分析擦手纸在不同介质的关键贡献成分及成分来源。结果表明,擦手纸从空气介质转变到水中气味感受变差,空气中关键气味贡献成分为壬醛、(E)-壬烯醛和(E,E)-2,4-壬二烯醛,水中为E-2-癸烯醛和1-辛烯-3-酮。工艺中应严格控制醛酮类物质的引入和产生,提高擦手纸的气味品质。 To improve the odor quality of Hand towel,the odor components and contributions of Hand towels in different media for air and water were studied.The static headspace solidphase microext rat ion-gas chromatograhpy-mass spectromet ry(HS-SPME-GC-MS)technique was adopted to test the odor components of Hand towel in the media of air and water.Combined with the relative odor activity value(ROAV)and sensory evaluation,the major contributing components and sources of Hand towel in different media were analyzed.The results showed that the odor perception of Hand towel deteriorated when they changed from the air medium to the water medium.The major odor-contributing components of paper towels in the air were nonanal,(E)-nonenal and(E,E)-2,4-nonadienal,while those of Hand towel in the water were E-2-decenal and 1-octen-3-one.To improve the odor quality of Hand towel,the introduction and generation of aldehydes and ketones should be strictly controlled in the production process.
