摘要
为提高虾活性肽的稳定性和作用效果,以阿拉伯胶和β-环糊精为壁材,采用喷雾干燥法制备虾活性肽微胶囊(shrimp bioactive peptide microcapsules,SBPM),实现虾活性肽的微胶囊化,并开展制备工艺优化和理化性质研究。试验结果表明:当壁材比(阿拉伯胶与β-环糊精的质量比)为3∶1、芯材与壁材质量比为1∶4、固形物含量为15%、单甘酯添加量为0.4%时,制备的SBPM为淡黄色类粉末,呈现类球体结构,无孔洞、开裂及不良气味,特征粒径D_(90)<10μm,流动性良好,虾活性肽包埋率为(90.11±0.23)%;虾活性肽与壁材之间的分子间相互作用促使二者形成微胶囊;微胶囊化可明显降低虾活性肽的吸湿性;SBPM经模拟胃肠液消化12 h的多肽累计释放量达89.82%,具有较好的缓释性能。
In order to improve the stability and efficacy of shrimp bioactive peptides,microencapsulation was carried out with Arabic gum andβ-cyclodextrin as wall materials through a spray-drying method,generating shrimp bioactive peptide microcapsules(SBPM).The preparation process was optimized,and the physico-chemical properties of SBPM were studied.The results showed that the prepared SBPM was a faint yellow pow-der with a spherical-like structure,no holes,cracks,or undesirable odors,a characteristic particle size of D90<10μm,and good flowability at the following conditions:wall material ratio(Arabic gum toβ-cyclodextrin mass ratio)of 3∶1,the core-to-wall ratio of 1∶4(mass ratio),the solid content of 15%,and the monoglyceride con-tent of 0.4%.The encapsulation efficiency of shrimp bioactive peptides reached(90.11±0.23)%.The intermo-lecular interactions between the shrimp bioactive peptides and the wall materials facilitated the formation of mi-crocapsules.Microencapsulation significantly reduced the hygroscopicity of the shrimp bioactive peptides.Af-ter 12 hours of digestion in simulated gastrointestinal fluid,the cumulative release of peptides from SBPM reached 89.82%,indicating good sustained-release performance.
