摘要
以化学诱变获得的水稻胚突变体作为试验材料 ,分析了胚、糊粉层和淀粉层等糙米各部位蛋白质含量及其对糙米总蛋白质含量的影响。结果表明 ,在糙米各部位中以胚内蛋白质含量最高 ;其次为糊粉层 ;淀粉层最低。胚的增大使千粒重和胚内蛋白质含量明显下降 ,但胚重和胚占糙米重的百分率以及胚内蛋白质占糙米总蛋白质含量的百分率则明显增加 ,胚的增大对糙米蛋白质含量的提高产生一定影响。若要提高糙米蛋白质含量 ,需要在增加淀粉层内蛋白质含量的同时 ,增加胚的大小。
Using embryo mutants obtained from hwacheongbyeo through chemical mutation as material, the protein contents of embryo, aleurone layer and starch layer for brown rice was analysed. The result indicated that the protein content of embryo was the highest among embryo and aleurone layer and starch layer. With the increase of embryo size, the grain weight of brown rice and protein content of embryo were decreased, but the weight of embryo and ratio of it to grain weight of brown rice, and the ratio of protein content of embryo to brown rice were increased. The protein content of brown rice was affected by increase of embryo size. It means that we must to increase protein content of starch layer and embryo, if want to increase protein content of brown rice. The increase of embryo size was important increasing way for protein content in rice.
