Monitoring and Analysis of Food Safety Risk in Hongkou District of Shanghai in 2023

摘要 目的了解上海市虹口区2023年不同种类食品中微生物污染状况,为食品安全风险监测提供科学数据。方法在虹口区农贸市场、商店、餐饮和网店等4类场所随机采集8类食品共454份进行检测和数据分析。结果在454份样品中有75份样品检出食源性致病菌,总体检出率为16.5%。其中,食源性致病菌检出95株,空肠弯曲菌和结肠弯曲菌的检出率最高(10.0%),其次为肠聚集性大肠埃希菌(8.5%),未检出创伤弧菌。不同食品种类、加工方式、采样地点和包装类型的样品微生物污染检出率差异有统计学意义(P<0.05)。生禽肉中致病菌检出率最高(53.0%)且检出致病菌的种类较多;加工后食用食品的检出率(25.5%)高于即食食品(2.8%);农贸市场的致病菌检出率最高(26.3%)。结论虹口区不同种类食品中存在不同程度的微生物污染,生禽肉的污染程度尤其严重。相关部门应重视并加强对农贸市场等场所的管理与监测,保障食品安全,有效地杜绝食品安全事故的发生。 Objective To understand the microbial contamination of different kinds of food in Hongkou District of Shanghai in 2023,and to provide scientific data support for food safety risk monitoring.Methods A total of 454 samples of 8 kinds of food were randomly collected from four kinds of places in Hongkou area,such as farmers'markets,shops,restaurants and online stores,and the data were analyzed.Results Foodborne pathogens were detected in 75 of 454 samples,and the overall detection rate was 16.5%.Among them,amount of 95 strains of foodborne pathogens were detected,and the detection rates of Campylobacter jejuni and Campylobacter coli were the highest(10.0%),followed by Enteroaggregative Escherichia coli(8.5%),and Vibrio vulnificus was not detected.The detection rates of different food types,processing methods,sampling locations and packaging types were statistically significant(P<0.05).The detection rate of pathogenic bacteria in raw poultry meat is the highest(53.0%),and there are many kinds of pathogenic bacteria.The detection rate of processed edible food(25.5%)is higher than that of ready-to-eat food(2.8%),and the detection rate of pathogenic bacteria in farmers'market is the highest(26.3%).Conclusion There are different degrees of microbial contamination in different kinds of food in Hongkou District,especially in raw poultry meat.Related departments should pay attention to and strengthen the management and monitoring of farmers'markets and other places to ensure food safety and effectively prevent food safety accidents.
