摘要 该文综述了不同类型大曲优势微生物的组成及代谢功能,并对已分离和应用的物种进行了概述。芽孢杆菌(Bacillus)、高温放线菌(Thermoactinomyces)、泛菌(Pantoea)、曲霉菌(Aspergillus)和嗜热子囊菌(Thermoascus)等是大曲中主要的优势微生物。其中,具有分泌淀粉酶、蛋白酶等功能的贝莱斯芽孢杆菌(Bacillus velezensis)、枯草芽孢杆菌(Bacillus subtilis)、地衣芽孢杆菌(Bacillus licheniformis)、多枝横梗霉(Lichtheimia ramosa)、米曲霉(Aspergillus oryzae)等物种都曾分离于不同类型大曲,异常威克汉姆酵母(Wickerhamomyces anomalus)、扣囊复膜酵母(Scchromycopsis fibuliger)、库德里阿兹威毕赤酵母(Pichia kudriavzevii)等酵母菌也是如此,而高温放线菌(Thermoactinomyces vulgaris)、沙阿霉素链霉菌(Streptomyces zaomyceticus)、娄彻氏链霉菌(Streptomyces rochei)等主要分离于高温大曲。这些物种主要被用于制作强化大曲、改善原生微生态系统和开发新产品等。该综述对大曲功能菌株的研究、分离鉴定及应用提供了全面的总结,有助于其微生物资源库的进一步完善,促进大曲微生物资源的开发与利用。 The composition and metabolic function of dominant microorganisms in different types of Daqu were reviewed,and the species selected and applied were summarized.Bacillus,Thermoactinomyces,Pantoea,Aspergillus,and Thermoascus were the main dominant microorganisms in Daqu.Among them,Bacillus velezensis,Bacillus subtilis,Bacillus licheniformis,Lichtheimia ramosa,and Aspergillus oryzae,which secreted amylase and protease,were isolated from different types of Daqu.The same was true for yeast species such as Wickerhamomyces anomalus,Scchromycopsis fibuliger,and Pichia kudriavzevii,while Thermoactinomyces vulgaris,Streptomyces zaomyceticus,and Streptomyces rochei were mainly isolated from high-temperature Daqu.These species were mainly used to produce fortified Daqu,improve the primary micro-ecosystem,and develop new products.This review provides a comprehensive understanding of the research,screening,and application of functional strains of Daqu,which is helpful to further improve the functional microbial resource library of Daqu and promote the development and utilization of microbial resources of Daqu.
