摘要
芽苗菜是植物种子或其他养分储存器官萌发而成的植株幼苗,具有丰富的营养素和多种对人体有益的重要成分。综述了不同种类芽苗菜中酚类、黄酮类、γ-氨基丁酸、维生素、矿物质等重要成分的含量变化,并对影响芽苗菜富集多种重要生理活性成分的盐类环境、微量元素强化、光环境等因素进行分析。在此基础上对芽苗菜在食品加工、医疗保健等方面的应用价值进行了探讨和总结。芽苗菜作为一种不受季节影响、生长周期短且富含营养素和多种功能性成分的健康蔬菜,未来将有广阔的发展前景。
Sprout vegetable is a kind of plant seedlings from the germination of plant seeds,which is rich in nutrients and a variety of important components beneficial to human body.This paper introduced the content changes of phenolic,flavonoid,GABA,vitamin and mineral in different kinds of sprout vegetables.The effects of salt stress,micronutrient enhancement and different wavelengths of light on the enrichment of various physiological active components in sprout vegetables were analyzed.Further,the application value of sprout vegetables in food processing,medical care and other aspects were discussed and summarized.Sprout vegetable is a kind of healthy vegetable which is not affected by season,has a short growth cycle and is rich in nutrients and many functional components.It is prospected that sprout vegetable industry will be greatly developed.
