乌龙茶品种特征及制作合肥红茶叶品质研究

摘要 乌龙茶品种因为独特的花香,加工的茶叶深受市场欢迎。合肥是茶产业大市,近年来也在逐步引种乌龙茶品种并用来加工合肥红茶。该文介绍合肥茶产业和合肥红生产现状,综述乌龙茶品种加工红茶研究进展,罗列金牡丹、金观音、黄观音和梅占等乌龙茶品种特性,并利用这4个品种采用合肥红的加工工艺进行加工,进行茶叶品质感官审评,结合品种、气候环境、加工工艺和市场等进行分析,就合肥红茶叶品质提升提出具体建议,以期为合肥茶产业做大做强提供参考。 Oolong tea is popular in the market because ofits unique floral fragrance. Zunyi is a large city of tea industry. In recent years, Oolong tea varieties have been gradually introduced and used to process Zunyi black tea. This paper introduces the present situation of Zunyi tea industry and Zunyi Red production, summarizes the research progress of Oolong tea processing with Oolong tea varieties, and lists the characteristics of Oolong tea varieties such as Golden Peony,Golden Guanyin, Yellow Guanyin and Meizhan. The four varieties are processed by the processing technology of Zunyi Red,and the sensory evaluation of tea quality is carried out, and the analysis is made according to the variety, climate environment, processing technology, market and so on. This paper puts forward specific suggestions on how to improve the quality of Zunyi black tea, in order to provide reference for Zunyi tea industry to become greater and stronger.
