摘要
黑木耳是一种药食两用的食用菌,富含黑木耳多糖、蛋白质、粗纤维、维生素B以及钙、磷、铁等微量元素。目前,国内食品制造企业以黑木耳为主要原料,研制出了一系列黑木耳深加工产品。本文从黑木耳的生物活性物质、保健功效以及食品深加工方面进行综述,以期为提高黑木耳产品附加值提供参考。
Auricularia auricularia is a kind of edible fungus used for both medicine and food. It is rich in Auricularia auricularia polysaccharide, protein, crude fiber, vitamin B and trace elements such as calcium, phosphorus and iron. At present, domestic food manufacturers have developed a series of deep processing products with Auricularia auricularia as the main raw material. In this paper, the bioactive substance, health function and food deep processing of Auricularia auricularia were reviewed, in order to provide references for increasing the added value of Auricularia auricularia products.
