摘要
为了解甘蔗不同堆放时间对红糖的品质的影响,通过在不同堆放时间,对2种甘蔗(柳城03-1137和ROC21)的蔗汁及红糖的蔗糖分、还原糖分、蛋白质含量、游离氨基酸总量、多酚含量、pH值及红糖水分、色泽、感官评定、硬度指标进行分析研究。ROC21制成的红糖蔗糖分随着堆放时间的延长逐渐下降,其中0~10天时下降率最高,还原糖分上升较多;在堆放时间5~10天时硬度变化最大,口感由硬变绵柔温润。柳城03-1137较ROC21变化较小,糖分转化慢。2个品种甘蔗汁和红糖游离氨基酸总量差异显著,多酚含量随着堆放时间的延长,呈增加的趋势。工厂想要绵柔温润的红糖,需控制其硬度在8000 g以下,蔗糖分80%左右,还原糖分10%以上为宜。在合适的时间,选择糖分转化较快的甘蔗品种优先入榨,且最长堆放时间不超过20天。
In order to understand the influence of different stacking time of sugarcane on the quality of brown sugar,the sucrose content,reducing sugar content,protein content,total free amino acid,polyphenol content,pH value and water content,color,sensory evaluation and hardness index of cane juice and brown sugar of two kinds of sugarcane were analyzed at different stacking time.The sucrose content of brown sugar produced of ROC21 brown sugar decreased gradually with the extension of stacking time,and the decrease rate was the highest at 0~10 days,and the reduced sugar increased more.When the stacking time is 5~10 days,the hardness changes the most,and the taste changes from hard to soft and moist.Compared with ROC21,Liucheng03-1137 had less change and slower sugar conversion.The total amount of free amino acids in sugarcane juice and brown sugar of the two varieties was significantly different,and the content of polyphenols showed an increasing trend with the prolongation of stacking time.If the factory wants soft and moist brown sugar,it needs to control its low hardness,low sucrose content and high reduced sugar content within a reasonable range.At the appropriate time,sugarcane varieties with faster sugar transformation should be preferentially pressed,and the longest stacking time should not exceed 20 days.
