摘要
【目的】研究盐度驯化对罗非鱼健康养殖的影响。【方法】以体质量为(178.35±46.44)g的罗非鱼为研究对象,分别将其驯养在盐度为0(S_(0))、12(S_(12))和24(S_(24))的水体中0和12 d,分析其对罗非鱼肉质、血清生化指标及Na^(+)-K^(+)-ATP酶活性的影响。【结果】盐度驯化0 d,S_(12)和S_(24)组罗非鱼血清三碘甲状腺原氨酸(T_(3))水平显著高于S0组(P<0.05);驯化12 d,S24组血清游离三碘甲状腺原氨酸(FT3)、T3和皮质醇的水平显著高于S0组(P<0.05)。盐度驯化可导致鳃丝Na^(+)-K^(+)-ATP酶活性显著升高(P<0.05),但血清各离子(Na^(+)、K^(+)和Cl^(−))浓度无显著变化(P>0.05);此外,盐度对肾脏和肠道Na^(+)-K^(+)-ATP酶活性以及血清葡萄糖水平无显著影响(P>0.05)。盐度驯化0 d,S_(24)组仅有部分质构指标(黏性、胶着性、咀嚼性和回弹性)显著高于S0组(P<0.05);盐度驯化12 d,S_(24)组的罗非鱼肌肉硬度、胶着性和咀嚼性显著高于S_(0)组(P<0.05),肌肉水分显著低于S_(0)组(P<0.05),但感官指标受驯化盐度和驯化时间的影响不显著。【结论】不同盐度驯化后,罗非鱼为了维持体内渗透压平衡,鳃丝Na^(+)-K^(+)-ATP酶活性升高,其肌肉品质也发生了不同程度的改变。本研究为罗非鱼的盐度驯化养殖提供了一定的数据支持。
[Purpose]To study the effects of salinity acclimation on healthy tilapia farming.[Methods]Tilapia with a body weight of(178.35±46.44)g were used as the research object,which domesticated in 0(S_(0)),12(S_(12))and 24(S_(24))salinity for 0 and 12 days,respectively.The effects of salinity on muscle quality,serum biochemical indexes and Na^(+)-K^(+)-ATPase activity were analyzed.[Results]After 0 day salinity acclimation,tilapia serum triiodothyronine(T_(3))level in S_(12)and S_(24)groups were significantly higher than that in the S0 group(P<0.05);on 12 days salinity acclimation,the levels of serum free triiodothyronine(FT3),T3 and cortisol in S_(24)group were significantly higher than those in the S0 group(P<0.05).Salinity acclimation increased the Na^(+)-K^(+)-ATPase activity in gill filaments significantly(P<0.05),but there was no significant change in the concentration of serum ion(Na^(+),K^(+)and Cl^(−))(P>0.05).In addition,salinity had no significant effect on the Na^(+)-K^(+)-ATPase activ-ity of the kidney and intestine and the serum glucose level(P<0.05).On salinity acclimation 0 day,only some of the texture profiles(viscosity,adhesiveness,chewiness,and resilience)in the S_(24)group were significantly higher than those in the S0 group(P<0.05);on salinity acclimation 12 days,the muscle hardness,adhesiveness and chewiness were significantly higher than those in the S0 group(P<0.05),the muscle moisture was significantly lower than S0 group(P<0.05),but the sensory indexes had no significant influence by acclimation salinity concentration and time.[Conclusion]After acclimation with different salinity,the activity of Na^(+)-K^(+)-ATPase in gill filaments of tilapia increases in order to maintain osmotic pressure balance in the body,and the muscle quality of tilapia also changes in different degrees.This study provides the data support for the salinity acclimation of tilapia.
