超微粉碎对山楂黄酮类化合物抗氧化活性的影响 被引量:14

Effect of Superfine Pulverization on the Antioxidant Activity of Hawthorn Flavonoids

摘要 通过超微粉碎辅助超声的方法提取山楂黄酮类化合物,并研究其体外抗氧化活性。以超微粉碎山楂粉的粒度为自变量,以DPPH自由基清除率、羟自由基清除率及ABTS+自由基清除率3个指标评价山楂黄酮类化合物的抗氧化活性,利用扫描电镜观察超微粉碎山楂粉的微观结构变化。结果表明,超微粉碎山楂粉粒度为1.0 mm时,山楂黄酮类化合物的提取率达到最大(13.01%),抗氧化活性达到最高,其中DPPH自由基清除率为95.2%,羟自由基清除率为46.4%,ABTS+自由基清除率为99.6%。扫描电镜图显示超微粉碎山楂粉与过20目筛的山楂粉相比,孔隙数增多,表面更粗糙,比表面积增大。 Hawthorn flavonoids were extracted by superfine pulverization assisted ultrasound,and their antioxidant activity in vitro was studied.The particle size of super-finely pulverized hawthorn powder was used as the independent variable,and the scavenging rates of DPPH,hydroxyl and ABTS+free radicals were adopted to evaluate the antioxidant activity of hawthorn flavonoids.Scanning electron microscope was employed to observe the microstructure changes of the super-finely pulverized hawthorn powder.The results showed that when the particle size of super-finely pulverized hawthorn powder was 1.0 mm,the extraction rate of hawthorn flavonoids reached the maximum(13.01%),and the antioxidant activity reached the highest,among which the DPPH free radical scavenging rate was 95.2%,and the hydroxyl radical scavenging rate was 46.4%,ABTS+free radical scavenging rate was 99.6%.The hawthorn flavonoids obtained by the superfine pulverization assisted ultrasound was found with enhanced antioxidant activity due to the change of surface morphology and the increase of specific surface area under the scanning electron microscopy.
