不同菇潮香菇农艺性状和营养成分变化研究 被引量:2

摘要 [目的]研究香菇不同菇潮子实体的农艺性状和营养成分的变化。[方法]以申香1504菌株为试验材料,常规方法栽培,记录3潮菇的产量,每潮菇取样测定子实体形态、营养成分、氨基酸和矿质元素含量,分析出菇潮次对子实体农艺性状和营养成分的影响。[结果]随着出菇潮次的增加,子实体的农艺性状除菌柄长度外都在逐渐降低;第1潮菇菌盖直径、厚度、单菇重、单菇干重、可溶性总糖和总必需氨基酸含量最高,而脂肪、铁和锌含量最低;第2潮菇菌柄长度、蛋白质、总营养成分、总非必需氨基酸、总氨基酸、药用氨基酸、鲜味氨基酸及钙、铁和锌矿质营养含量最高,而可溶性总糖、粗纤维含量最低;第3潮菇脂肪和粗纤维含量最高,而粗蛋白、总营养成分、氨基酸组成及钙含量最低。[结论]香菇子实体不同潮次间农艺性状和营养成分含量不同,可根据具体应用选择不同菇潮的子实体作为原料。 [Objection]The different of agronomic traits and nutrient components of Lentinus edodes at different flushes was studied.[Method]Strain Shenxiang 1504 was cultivated normally,and the agronomic traits,protein,soluble total sugar,crude fiber,amino acid and mineral elements Ca,Fe and Zn content in fruiting-body of the first three flushes were tested to analyzed the effect of flushes.[Result]The agronomic traits of fruit body decreased with the increase of the flush except the length of stipe.The contents of total soluble sugar and total essential amino acid were the highest,while the contents of fat,iron and zinc were the lowest at the first flush.The contents of stipe length,protein,total nutrients,total non-essential amino acids,total amino acids,medicinal amino acids,umamic amino acids,Ca,Fe and Zn were the highest,while the contents of soluble total sugar and crude fiber were the lowest at the second flush.The contents of fat and crude fiber were the highest,while the contents of crude protein,total nutrient,amino acid and calcium were the lowest at the third flush.[Conclusion]In general,the fruiting bodies of Lentinus edodes differed in agronomic characters and nutrient contents among different flushes;different flushes could be selected as raw materials according to specific applications.
