摘要
巨豆三烯酮(Megastigmatrienone,MEG)难以储存,从而影响卷烟加香稳定性.为了提高MEG的稳定性及加香缓释效果,以β-环糊精(β-cyclodextrin,β-CD)作为包合材料,采用饱和水溶液法制备了MEG和β-CD的包合物(MEC),并对MEC进行了表征和稳定性试验.傅里叶变换红外光谱(Fourier transform infrared spectroscopy,FTIR)和差示扫描量热分析(Differential scanning calorimetry,DSC)确认了MEC的形成.热重(Thermogravimetric,TG)分析表明包合后提高了MEG的热稳定性,升温速率为10℃/min,温度升至262.58℃时,MEC比MEG的热稳定性高了71.37%.卷烟加香实验结果表明,MEC处理与MEG处理相比香气质、香气量、浓度、杂气、刺激性和余味得分分别提高了6.45%、8.06%、9.84%、3.27%、1.59%和3.33%.MEG和β-CD的包合物制备及稳定性试验可为MEG的储存、卷烟加香应用提供理论依据.
Megastigmatrienone(MEG)is difficult to store,which affects the stability of cigarettes flavoring.In order to improve the stability and sustained-release effect of MEG,β-cyclodextrin(β-CD)as inclusion material was used to prepare MEG andβ-CD inclusion complex(MEC)by saturated aqueous solution method,and the MEC was characterized and tested for stability.Fourier transform infrared spectroscopy(FTIR)and differential scanning calorimetry(DSC)were used to confirm the formation of MEC.Thermogravimetric(TG)analysis showed that thermal stability of MEG was improved after encapsulation,and the temperature increased to 262.58℃at a rate of 10℃/min,the thermal stability of MEC was 71.37%higher than that of MEG.The results showed that compared with MEG treatment,MEC treatment increased the score of aroma quality,aroma,concentration,miscellaneous gas,irritant and aftertaste by 6.45%,8.06%,9.84%,3.27%,1.59%and 3.33%,respectively.The preparation and stability test of the inclusion compound of MEG andβ-CD can provide a theoretical basis for the storage of MEG and the application of cigarette flavoring.
