摘要
在食品的整个腐败过程中,微生物的细菌群体感应发挥着极为重要的作用,它是导致食品变质的主要原因之一,也是当前食品保鲜技术领域的科研新“靶点”。本文以微生物群体感应系统为主要研究方向,简要概述了微生物群体感应对食品腐败过程的潜在性影响,重点分析了食品腐败中细菌群体感应现象的主要作用,并深入探究了微生物群体感应系统的具体应用策略与手段,以期为食品食用与品质安全提供良好的理论依据保障。
In the whole process of food spoilage,the bacterial quorum sensing of microorganisms plays an extremely important role,it is one of the main causes of food spoilage,but also a new scientific research “target”in the field of food preservation technology.Based on the microbial quorum-sensing system as the main research direction,and provided a brief overview of microbial quorum sensing the potential influence of the process of food corruption,analyzed food bacterial quorum sensing in the corruption phenomenon,the main function of and delves into the microbial quorum-sensing system concrete application strategy and method,so as to provide a good theoretical basis for food safety and quality assurance.
