摘要
文章主要介绍了辣风味在中国、日本及其他国家的流行现状,重点从辣椒食材、辣风味特点等方面进行了说明,详述了辣椒的分类及其特征、辣椒风味成分和辣椒制品的研究现状,并对市场上常见的辣椒品种特点和辣椒在餐饮上的应用现状进行了分析,最后分析了方便面中常见的辣风味及其辣风味趋势。
In this paper,the popular status of spicy flavor in China,Japan and the other countries is introduced,the pepper ingredients,spicy flavor characteristics and other aspects are elucidated,the classification and characteristics of pepper,the research status of pepper flavor components and pepper products are described in detail,and the characteristics of common pepper varieties on the market and the application status of pepper in catering are analyzed.Ultimately,the common spicy flavor and its flavor trend in instant noodles are analyzed.
