摘要
采用超声波萃取法制备八角提取物,通过GC/MS分析其挥发性成分,共分离鉴定出27种有明显特征香气的物质。其中,茴香脑的相对含量最高,达到75.04%;其次是茴香醛,占12.50%;大茴香酸和草蒿脑的含量也较高,各占3.28%和2.03%。卷烟加香试验表明,八角提取物能丰满烟香,增加特殊的辛香和甜香,较为合适的用量为0.05 mg/g。
The star anise extract was prepared by ultrasonic extraction,the volatile components were analyzed by GC/MS,and 27 aroma components which had obvious effect on cigarettes were separated and identified.Among them,the relative content of anethole was highest,up to 75.04%,followed by anisaldehyde,accounted for 112.50%,and the contents of anisic acid and estragole were also higher,accounted for 3.28%and 2.03%;the sensory evaluation indicated that the star anise extract could enrich smoke aroma,improve aroma quality,add special aroma and soften smoke,the rational consumption was 0.05 mg/g.
