摘要
卡拉胶是由含硫多糖组成的红藻天然亲水胶,具有大量羟基,是一种具有良好的凝胶稳定性、稠度和成膜性等特点的生物基材料,在各种行业中都有广泛应用。本文主要在针对卡拉胶凝胶性能和不同物质对卡拉胶凝胶特性的影响,以及卡拉胶在食品领域、医药领域、化工领域和能源环保领域的近几年应用做出概括性论述及总结。其中,大部分为今年来年卡拉胶应用最新的研究成果。
Carrageenan is made up of red algae polysaccharide sulfur natural hydrophilic gel,with a large number of hydroxyl groups,is a kind of good stability of gel consistency and film-forming characteristics of biological materials,are widely used in various industries.This article is mainly about the gel properties of carrageenan and the effects of different substances on the gel properties of carrageenan,and the recent application of carrageenan in food,medicine,chemical engineering and energy conservation.Most of them are the latest research results of carrageenan application in the next year.
