摘要
对白酒糟、麸皮和糖蜜等废弃物为原料固态发酵红曲红色素的培养基进行了研究和优化。结果表明,以乳酸水溶液进行白酒糟的润料能显著提高红曲红色素的色价。润料水的pH值、糖蜜添加量、麸皮浸提液添加量对红曲红色素的色价影响显著。通过正交试验确定了固态发酵红曲红色素的最佳培养基为pH值5.5,糖蜜添加量2.0%,麸皮浸提液添加量6.0%,在此条件下红曲红色素色价的平均值为729.7 U/g。
The medium of solid-state fermentation of red koji pigment from liquor grains,bran and molasses was studied and optimized.The results showed that red koji red pigment could be significantly increased by lactic acid.Addition of moistening water pH,molasses and bran extract had significant effect on the color value of red pigment.The optimum medium was determined by orthogonal experiment as pH 5.5,molasses 2.0%and bran extract 6.0%,and the average color value of red koji was 729.7 U/g at these conditions.
